Stuff I'd like to learn

It seems like every January, I get all introspective about stuff I'd like to learn, if only I had the time and the initiative. This post is from Jan. 2007, and this one is from late Dec. 2005. And, true to form, it is now just past January, and I am thinking about things that I would like to learn.
If I had the time, money, and initiative, I would learn to:
- cook well enough to have friends or family over and not feel embarrassed to be serving them store-bought food
- play the fiddle well enough to take out my violin at SCA or related events and entertain people (the good way, not the "oh god, she's so bad it's funny" way)
- play the guitar, same level of skill
- play the piano, ditto (well, not at events, but at home, anyway)
- project properly when I'm singing
- sing a harmony line
- draw / sketch well enough to put down on paper the scene before my eyes or my mind's eye
- garden well enough to eat vegetables, fruits, and herbs from my own harvest
- give really good massages
- take photographs good enough to feel comfortable hanging them on my wall
- to speak the following languages well enough to hold a conversation: Hebrew, Cantonese or Mandarin, Arabic, Yiddish, one of the Indian languages, Italian
- sew well enough to make clothing I'd be happy to wear in public
- do calligraphy well enough to do wedding invitations or SCA scrolls
So... if you had the time, money, and initiative, what would you learn?

-Learn ballet
-Learn Karate
-Read more about religion/philosophy
-Read many other things too: history, sciences, literature, novels, how to ... books (last one was how to be a good poker player, fascinating, but I still can't bluff if my life depends on it, especially if my life depends on it I guess)
-Take artistic photographs
-Travel and maybe learn their language
-On that note, understand Cantonese so I don't have to say: I have no idea, that's not Mandarin
-Knit and embroider
-Cook more often things that are actually edible
-Write legibly and fast enough with my left hand, preferably in a handwriting different than my right. (for if one day I want to fake double personalities)
